The Well Trained Mind: A Guide to Classical Education at Home
Susan Wise Bauer and Jessie Wise are a mother and daughter writing team who wrote this book suggesting a Pre-12 curriculum based on Dorothy Sayers' essay "The Lost Tools of Learning".

Designing Your Own Classical Curriculum: A Guide to Catholic Home Education
Laura Berquist's book with a set of recommendations from the Catholic persective, using the same Sayers essay as inspiration.

A Little History of the World
E. H. Gombrich's charming narrative style makes this classic history of the world for young people a find read aloud. It is, however, as the title states "little". The whole history of the world is covered in just under 300 pages. Some of Gombrich's writing also has a somewhat early 20th Century, progressive, continental feel to it which some readers may disagree with.

How to Listen to and Understand Great Music
This 48 lecture audio course from The Teaching Company provides an outstanding overview of the history of Western Music from the middle ages through the beginning of the 20th century. Prof. Greenburg's lectures are fun and accessible without being fluffy. The level is mid-high school to adult. I think this would make an outstanding supplement to the last two years of the high school humanities program, especially for a student with a particular interest in music. (Any individual course should go on sale every 2-3 months -- make sure you buy it at the sale price, which is much, much less than the full price.)
